Hallelujah Ham Rolls


1 cup butter

3 T poppy seeds

1 t Worcestershire sauce

3 T prepared mustard

1 medium onion

1 lb boneless cooked ham, minced

12 oz swiss cheese, grated

60 small party rolls(Pepperidge Farm) or 16 sliders 

    Preheat oven to 400 F. Cream first 4 ingredients. Add onion, ham and Swiss cheese; mix well. Halve rolls lengthwise and place cut side up in pan. Spoon ham mixture on top. cover with remaining halves. (Seal and freeze at this point, if desired.) 

    To bake, sprinkle lightly with water and cover with foil. Bake 10 minutes or until heated thoroughly. 

    A second way to present these is to cut the rolls in half, spread the mixture and then broil until thoroughly hot. Serve open face.

Mamie’s Sandwich

 Munster cheese

Cheddar cheese

1/2 lb. Virginia Baked ham

1/2 lb. Turkey

1/2 lb. Roast Beef

Tomatoes 

Lettuce                                 

Onion

Horseradish 

Deli mustard

Mayonnaise 

Mix horseradish, mustard, and mayonnaise. Assemble on sourdough bread.

Egg Salad


 6 eggs hard boiled

6 Tbsp mayonnaise 

1 Tbsp apple cider vinegar 

2 tsp mustard

Salt and pepper


       Mash eggs and mix in the rest of the ingredients.

Three Cheese Pimento Cheese


1 (3-ounce) package cream cheese, room temperature
1 cup grated sharp cheddar
1 cup grated Monterey Jack
1/2 cup mayonnaise
1/2 teaspoon House Seasoning, recipe follows
2 to 3 tablespoons pimentos, smashed
1 teaspoon grated onion
Cracked black pepper

Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. It can be used as a dip for crudite* or as a sandwich filling.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

*I had to find the definition of crudité. - Strips of raw vegetables served with a vinaigrette or other dipping sauce.
