Patriotic Pasta

Italian Pasta in Cream Sauce:

4 T butter                                        
1/2 cup heavy cream                                                                          
2 T chicken broth                          
1 t salt
cracked pepper to taste
8 oz. Fresh or packaged pasta, cooked Al dante and tossed
with 1/4 cup olive oil
1/2 cup grated Parmesan cheese

Melt butter and add cream, chicken broth, salt and pepper. Cook, stirring, until sauce thickens slightly. Add pasta and Parmesan cheese and toss to coat.

Italian Tomato Sauce:

1 whole leek, chopped                    
1 sm onion, chopped 
1/4 cup olive oil or 32                    
1 clove garlic, minced                     
2 lbs fresh tomatoes, peeled          
   and chopped or 1  32-oz can       
   Italian-style tomatoes, not 
   drained
1/4 cup fresh basil leaves or 1 tablespoon dried 
1 t red pepper flakes
1 T salt
1/2 cup minced fresh parsley
1 cup white wine

Saute leek and onion in olive oil until tender. Add remaining ingredients and bring to a boil. Reduce heat and simmer at least 1 hour.

4 c steamed vegetables, your choice of at least 2:
zucchini                                           snow peas
broccoli                                            Toasted pine nuts or almonds (optional)
asparagus
green beans

Steam or blanch vegetables until tender-crisp. Keep warm.

To assemble place pasta in individual soup bowls. Add a ladle of tomato sauce and top with steamed vegetables. Toasted pine nuts or almonds may be sprinkled on top Yield: 4 servings as a main course or 6 servings as an appetizer.


The three layers in this dish are the colors of the Italian flag-white, red and green! The pasta in Cream Sauce is a good basic recipe. Seafood or leftover chicken ham or turkey may be added or pasta may be served, as is as a side dish. The tomato sauce may be made several days in advance. It keeps well and may be used in a variety of recipes calling for tomato sauce.


I sometimes sauté chicken in olive oil and garlic and mix it with the pasta and sauce.
