Carrot Cake



2 c sugar                                               2 t baking soda
1 ½ c oil                                                 2 t Cinn.
4 eggs                                                    ½ c nuts
2 c flour                                                 3 c carrots
1 t salt
      Mix oil, sugar and eggs. Add flour, salt, cinn, and soda. Fold in nuts and carrots. Pour into 3 - 9” cake pans. Bake at 350°F for 25 minutes.
Icing
1lb 10x sugar
1 stick marg. or butter
8 oz cream cheese
2 t vanilla

      Beat well.
