Pound Cake


3 cups sugar
½ cup shortening
1 cup margarine
3 cups plain flour
5 eggs
1 cup milk
1½ Tablespoons Vanilla

Preheat oven 325. Prepare tube pan by spreading with shortening and then flour. This is a must.

Cream sugar, shortening and margarine until light and fluffy. (Important for the texture of cake) Add flour, eggs, and milk alternately. Add vanilla. Beat for 10 minutes with hand mixer or 7 minutes with Kitchen Aide, on Med. Bake at 325 for 1 hr. and 25 min.    

This cake can be tricky! Notice there is nothing in this cake for leavening. Beating the eggs is what makes it work but over beating is not good either. So I suggest you gauge how much to beat it by comparing the hand mixer with the Kitchen Aide mixer and what ever you have. Believe me it’s worth it!

Chocolate Pound Cake-add 6 T cocoa with flour
Almond Pound Cake-3 t. al. extract 2 t. vanilla 

                            Strawberry Amaretto Shortcake

Almond Pound Cake
Sliced strawberries
Small amount of amaretto-mix in strawberries
Whipped heavy cream
