Chocolate Pie


3 1/2 T cocoa

4 T flour

1 t vanilla

 1/4 t salt

2 cups milk

3 eggs

1 cups sugar


Mix flour,cocoa, sugar and salt.Pour the milk into the cocoa mixture and stir until well mixed. Stir continuously over medium-low heat until it has thickened. Remove from the heat. Beat egg yolks and add them to the still hot chocolate mixture while constantly stirring. Add vanilla. Pour into baked pie shell. Cool completely. Garnish with whipping cream or make meringue with leftover egg whites.

Lemon Tea Cookies


                        
1 2/3 cups flour
1/3 cup 10x sugar
1 cup butter, softened
1t vanilla

filling
1egg, beaten
2/3 cup sugar
2 to 3 teaspoons grated lemon zest
1 t cornstarch
¼ t salt
3 T lemon juice
1 T butter
1 to 2 T 10x or coconut


Lightly spoon flour into measuring cup; level off. N medium bowl, combine all dough ingredients; blend well. Cover with plastic wrap; refrigerate 30 minutes for easier handling.


Heat oven to 350. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. With thumb, make deep imprint in center of each cookie.

Bake at 350 for 8 to 10 minutes or until light golden brown. Immediately remove from cookie sheets. Cool completely.

In medium saucepan, combine all filling ingredients except 10x sugar. Cook over low heat until smooth and thickened, stirring constantly. Cool filling slightly. Spoon ¼ teaspoon filling into center of each cooled cookie; sprinkle with powdered sugar or coconut. Yield: 3 dozen

Oatmeal Cookies - Paula's Loaded





1/2 cup (1 stick) butter, softened
1/2 cup vegetable shortening
1 1/2 cups packed light brown sugar
2 eggs
1/2 cup buttermilk
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon freshly ground nutmeg
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground allspice
2 1/2 cups quick-cooking oatmeal
1 cup raisins
1 1/2 cups chopped walnuts
1 teaspoon pure vanilla extract 

Brown Butter Icing, recipe follows 

Preheat oven to 350 degrees F. 
Grease 1 or more cookie sheets. Using an electric mixer, cream together butter, shortening, and sugar in a bowl until fluffy. Add eggs and beat until mixture is light in color. Add buttermilk. Sift together flour, baking soda, salt, baking powder, ginger, nutmeg, cinnamon, cloves, and allspice; stir into creamed mixture. Fold in oatmeal, raisins, walnuts, and vanilla, blending well. Drop by rounded teaspoons onto cookie sheet. Bake for 12 to 15 minutes. Drizzle with Brown Butter Icing. 
Brown Butter Icing:
1/2 cup butter
3 cups sifted powdered sugar
1 teaspoon vanilla extract
3 to 4 tablespoons water 
In a small saucepan heat the butter over medium heat until golden brown, stirring occasionally. Remove saucepan from heat; stir in 3 cups sifted powdered sugar and 1 teaspoon vanilla. Stir in enough water (3 to 4 tablespoons) to make an icing of drizzling consistency. Drizzle on warm cookies. 

Yield: enough to ice 5 dozen cookies

Pound Cake


3 cups sugar
½ cup shortening
1 cup margarine
3 cups plain flour
5 eggs
1 cup milk
1½ Tablespoons Vanilla

Preheat oven 325. Prepare tube pan by spreading with shortening and then flour. This is a must.

Cream sugar, shortening and margarine until light and fluffy. (Important for the texture of cake) Add flour, eggs, and milk alternately. Add vanilla. Beat for 10 minutes with hand mixer or 7 minutes with Kitchen Aide, on Med. Bake at 325 for 1 hr. and 25 min.    

This cake can be tricky! Notice there is nothing in this cake for leavening. Beating the eggs is what makes it work but over beating is not good either. So I suggest you gauge how much to beat it by comparing the hand mixer with the Kitchen Aide mixer and what ever you have. Believe me it’s worth it!

Chocolate Pound Cake-add 6 T cocoa with flour
Almond Pound Cake-3 t. al. extract 2 t. vanilla 

                            Strawberry Amaretto Shortcake

Almond Pound Cake
Sliced strawberries
Small amount of amaretto-mix in strawberries
Whipped heavy cream

Pecan Pie



My Mom makes the best pecan pie this is her recipe....

1/2 c sugar
2 t flour
3 eggs
1 c green label Karo syrup (can't find it any more so I use blue)
1/2 c butter melted
1/2 c pecans

Combine everything and pour into a uncooked pie shell. Bake at 350°F for 35 minutes or until set in the middle.

This recipe must have been for a small shallow pie plate. I usually make 3 recipes and put it into 2 pie shells. I also add some pecans. Which means it cooks longer.

Sugar Cookies

1 cup sugar
1 stick butter (must be butter)
1 egg
2 cups plain flour
2 t Baking powder
1/8 salt
1 t vanilla

Cream butter and sugar, then add egg. Mix the remaining ingredients until just mixed well.


Roll out to roughly 1/8 inch, cut and bake at 375 for 5 to 7 minutes.

Wonderful Fudge



This is my mother-in-law's recipe. I think it's the best.

1/2 c butter 
1 can (14 1/2 oz)                     evaporated milk 
4 1/2 c sugar

1/2 lbs marshmallows
2 oz unsweetened choc.
12 oz semi-sweet choc.
3 (4oz) bars german choc.
1 T van.
2 c chopped nuts

Over moderate heat, combine and melt butter, sugar and milk, bring to a boil for 5 minutes, stir, then turn off the heat add marshmallows and stir until melted. Then add each different  broken up chocolate one at a time, stir until melted. Stir in vanilla and nuts. Pour into 10x15 buttered pan. Let stand until firm. Cut into 1 in. squares.

It is not necessary to use the 3 chocolates above but use 26 oz. of your choice of chocolates.

My mother-in-law used 2 lbs(8 cups) pecans.
I use 1 lb (4 cups.)
