1/2 cup butter
2 oz unsweet chocolate
1 cup sugar
2 eggs
1/2 cup plain flour
3 to 5 drops peppermint extract
Filling:
1 cup 10 X sugar
2 T butter
1 T milk
3 to 5 drops peppermint extract
5 drops green food coloring
Topping:
1 oz Unsweetened chocolate
1 T margarine
Preheat the oven to 350°F. Melt the butter and chocolate (I do this in the microwave but be careful not to overcook) and add to the sugar. Beat the two eggs and add to the chocolate mixture. Fold in the flour and add the peppermint extract. Bake for 25 minutes or until the brownies start to pull away from the sides of the pan.
Mix all of the filling ingredients and spread onto the cooled brownies.
Melt the chocolate and margarine. Stir a little until it is smooth and sprinkle (or pour ) it over the brownies.
