Quick Cheese Cake


 Quick Cheesecake


2-8 oz packages cream cheese

3 eggs

3/4 cup sugar

1/2 t vanilla extract

1 cup sour cream

3 T sugar

1T vanilla


Beat cream cheese, eggs, sugar and extract for 20 minutes at medium speed, until smooth. Pour into a well-greased 9-inch pie pan. Bake at 350 for 25 minutes. Allow to cool for 20 minutes.


Mix a topping of sour cream, sugar and vanilla. Pour over cooled pie. Bake only  10 minutes at 350 (no longer, or the sour cream will curdle). Refrigerate at least 5 hours before serving. Serve plain or topped with frozen or fresh strawberries. Serve 6 to 8. ( For variety, pour into 9-inch graham cracker shell.)


Double and put in 8-inch springform pan and bake 55 minutes or until set. Use a water bath to prevent cracking on the top. (Cover the bottom so that it can’t leak, place in water and bake.
